It’s Good Friday; the start of the Easter weekend holidays for people of the Christian faith. The celebration is a reminder of the ultimate sacrifice that Jesus Chris made. Welcome Pesach! Happy Passover!

The eight-day celebration of Pesach (or Passover) begins this evening at dusk. Passover is one of the most widely observed Jewish holidays and is marked with the seder. The Passover Seder is a traditional meal during which time the story of the Exodus from Egypt is recited from the Haggadah (text that explains Pesach). There is much feasting and drinking of wine, although leavened products are strictly forbidden. In fact, in the days leading up to Passover the home of any practicing Jews are thoroughly expunged of any chametz (any products made from wheat, rye, barley, oats or spelt). Not an easy task!

By the time the seder finally arrives you are well deserving of that wine! The presence of wine is not to be taken lightly either though. It represents the celebration of the Jews freedom and there are four glasses that need to be drunk during specific parts of the Seder; during Kaddesh (Sanctification of holiday), Maggid (retelling of the story of the Exodus), Barekh (grace after meal) and finally during Hallel (final blessings, psalms and praises). All that wine helps to wash down the matzah (traditional unleavened bread eaten during Passover), bitter herbs (reminder of bitterness of slavery), charoset (reminder of mortar used to make bricks during slavery) and the rest of the feast.

If you’ve never tried charoset before, its delicious and well worth anyone making and enjoying! Here’s a recipe;

Ingredients:

• 4 medium apples, 2 tart and 2 sweet
• 1/2 cup finely chopped almonds
• 1/4 cup sweet wine
• 1/4 cup dry wine
• 1 Tbs. cinnamon

Directions:

Shred the apples. Add all other ingredients. Allow to sit for 3-6 hours, until the wine is absorbed by the other ingredients. Serve on matzah. Goes very well with horseradish.

As with most any celebrations though, Pesach is about the people. It is a celebration of Jewish freedom and family. Children figure heavily in the Seder celebrations, in part because they represent the future. That is why the task fall to them to find the Afikoman. The afikoman is a piece of the matzah that has been broken earlier in the feast. Close to the end of the seder, the children are given the task to either find it as reward or demand payment from the adults for its return. Little do the little ones know that it is also a tool to keep them awake during the proceedings. It is all part of the ceremony and fun though.
