Beer Can Chicken

INGREDIENTS:

• 1 (4-pound) whole chicken
• 2 tablespoons vegetable oil
• 2 tablespoons salt
• 1 teaspoon black pepper
• 3 tablespoons of your favorite dry spice rub
• 1 can beer

DIRECTIONS:

Remove neck and giblets from chicken and discard. Rinse chicken inside and out, and pat dry with paper towels. Rub chicken lightly with oil then rub inside and out with salt, pepper and dry rub. Set aside.

Open beer can and take several gulps (make them big gulps so that the can is half full). Place beer can on a solid surface. Grabbing a chicken leg in each hand, plunk the bird cavity over the beer can. Transfer the bird-on-a-can to your grill and place in the center of the grate, balancing the bird on its 2 legs and the can like a tripod.

Cook the chicken over medium-high, indirect heat (i.e. no coals or burners on directly under the bird), with the grill cover on, for approximately 1 1/4 hours or until the internal temperature registers 165 degrees F in the breast area and 180 degrees F in the thigh, or until the thigh juice runs clear when stabbed with a sharp knife. Remove from grill and let rest for 10 minutes before carving.

Chimichurri Sauce

INGREDIENTS:

DIRECTIONS:

Chop the parsley, garlic and onion and put them in a glass jar or small bowl. Alternatively use a food processor to chop these ingredients and to puree the final product.

Add all other ingredients and either mix well by hand or blend in a food processor.

Cover and let sit at room temperature for at least 2 hours to allow the flavors to blend before using.

Store in a sealed glass jar for up to 3 weeks. Enjoy!

And so my vegetarian friends don’t get their noses out of joint, I have to include this succulent recipe for grilled portobello mushrooms that will wow all of your guests when you present them on your very own personalized acrylic tray! The folks at Allrecipes are responsible for this yummy treat.

Grilled Portobello Mushrooms

INGREDIENTS:

• 3 portobello mushrooms
• 1/4 cup canola oil
• 3 tablespoons chopped onion
• 4 cloves garlic, minced
• 4 tablespoons balsamic vinegar

DIRECTIONS:

Clean mushrooms and remove stems, reserve for other use. Place caps on a plate with the gills up.

In a small bowl, combine the oil, onion, garlic and vinegar. Pour mixture evenly over the mushroom caps and let stand for 1 hour.

Grill over hot grill for 10 minutes. Serve immediately.

At Passover, Jews celebrate the story of the Exodus; the story of their freedom. Ancient Israelites had been held in slavery by the Egyptians for many years, until Moses demanded their freedom. April showers bring May flowers

 

While the May flowers will be a beautiful thing to look forward to, if you have showers in your part of the world, why not make the best of it by tackling a little spring cleaning? The long months of winter see us all hibernate a little, but it is time to clean out your nest and spruce up your home. Need a few suggestions of how to make your world sparkle again?

SPRING CLEANING SUGGESTIONS

• Wash the winter grime from your windows and let the beautiful sunshine in. A natural solution to cleanse your panes, without damaging your skin or irritating your children’s noses is this solution in a spray bottle. Easy on the senses and your pocket book!
  • 2 Cups water
  • 1/4 Cup white vinegar
  • 1/2  tsp dish soap

  Pack away the mitts, scarves, boots and snow pants. Give them a good clean before stowing them for the season and think about popping a dryer sheet or two in with them to keep them smelling fresh til next season. Time to replace them with summer hats and sunscreen! Check expiry dates on last year’s sunscreen and aftersun, and replace as necessary.

Once you can find the floor again, then reorganize the remaining toys back onto shelves and into handy bins or pails.
